Big Ts Italian potato and green bean salad

INGREDIENTS
2 1/2 pounds of Yukon gold potatoes
1 pound fresh green beans
1/2 red onion
5 cloves garlic
3 medium tomatoes
1/4-1/2 c red wine vinegar
1/4 -1/2 c olive oil
1 t black pepper
2 t Himalayan’s Finest salt

DIRECTIONS
Boil cubed potatoes (2 inches by 2 inches) for 15-18 minutes. Remove from water and allow to cool Place trimmed green beans into the same boiling water for 8 minutes. Remove to cool Thinly slice red onion
Quarter tomatoes
Place above ingredients into a large glass or ceramic bowl
Mix remaining ingredients in a medium glass bowl
Pour wet ingredients over potato mixture in the large bowl and mix (toss) Allow to cool in the refrigerator for a minimum of 2 hours
Salad be delicious for days refrigerated ( if it last that long)
