Crispy Parmesan Roasted Potatoes with Himalayan’s Finest Pink Salt

1 1/2 pounds of baby new potatoes
1/2 c fresh Parmesan cheese (grated)
1/2 t garlic powder
1/4 c paprika
1/2 t oregano
3/4 t black pepper
1/2 t Himalayan’s Finest pink salt
2 T olive oil
Cut washed new potatoes in half
in a small bowl combine grated cheese, garlic powder, paprika, oregano, pepper, and HF pink salt.
stir ingredients with a fork until mixed well
evenly coat bottom of a 9 X 13 glass baking dish with olive oil
sprinkle all of the cheese mixture over olive oil on the bottom of the dish
place new potatoes cut side down and press lightly into the cheese mixture
bake 40 minutes at 400*
test potatoes doneness with a fork
remove from oven and allow to rest for 5 minutes
